Shortnose or Atlantic Sturgeon Heads are produced in Carters Point NB from Ocean Wise shortnose sturgeon farmed lanbased in an Ocean Wise certified facility in Charlo NB or from a wild sustainable (Ocean Wise) fishery on St. John River, from migrating Atlantic sturgeon from the Bay of Fundy! Large Atlantic sturgeon heads are cut in quarters with a meat saw. It can be used soups, broths, Thai or Chinese food, etc. Heads are made or cartilage, only a few bonny plates are present on the outside of the heads.
