We offer seasonally our sustainable Acadian Wild Caviar (the only in the world, adults live and ard native in the Bay of Fundy and migrate in the St. John river for spawning!) and when we run out we switch to our exclusive landbased farmed Acadian Emerald sturgeon caviar, grown in New Brunswick from the St. John River native shortnose sturgeon. Grown in a natural cycle, our fish are taking the winter off, no feeding, just relaxing, like they also do in nature! Certified sustainable by Ocean Wise. Our caviar is similar to ossetra in size and has a delicate buttery and nutty taste.
